Banana Bread

Yea yea yesterday i titled the post “Banana Bread and Peanut butter Cookies” but failed to give a recipie.  Dont worry, I will give it today:) In fact, here it is, my version of the great Veganomicon’s Lower fat Banana Bread:

Banana Bread

  • 2-3 Large bananas (i always use 3)
  • 1/4 cup applesauce
  • 1/4 cup peanut butter
  • 1/4 cup agave
  • 2 tbsp molasses
  • 2 cups whole wheat flour
  • 3/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg    *i dont have it:( but use it if you do!
  • 1/2 tsp salt
  • 1/2 cup vegan chocolate (or carob) chips

Preheat oven to 350 degrees and grease and flour a pan. I use an 8X8 but it calls for a 9X5.

Mash bananas then add all wet ingredients. In a separate bowl mix together the dry ingredients and chocolate chips and then mix the dry into the wet until just combined (DONT over mix).

Pour into the pan and the bake for 45-50 minutes.Cool and enjoy:)

I took this picture the next morning haha, its super good so it disappears quickly!

Awesome cakey texture with just the right amount of gooey banana goodness:)

Since you are obviously going to make this and so you dont have to drag your laptop into the kitchen and risk getting it dirty, you could:

a) print this page out

or

b) Buy a copy of Veganomicon

I HIGHLY HIGHLY HIGHLY suggest that you do option b since this is one of my favorite cookbooks!!! And i even found you an awesome deal: there is a used one for $10.59! I don’t know why some crazy person would ever sell this cookbook but their stupidity is in your favor:)
