Banana Bread and Peanut Butter Cookies

November 11, 2010

After a weekend of being away and eating out, I couldn’t wait to get home and do some baking!!

First i wanted to make some peanut butter cookies so i headed over to Oh She Glows and decided on the Salted Peanut Butter Chocolate Chip Cookies🙂 Holy YUM!!!!!! They were delicious:):)

1 + 1/4 cup whole wheat flour

1/4 cup sugar

1/4 tsp sea salt (or get fancy stuff)

1/4 tsp baking soda

1 tsp baking powder

3-4 tsp non-dairy dark chocolate chips

1.5 tbsp chunky peanut butter

2 tsp pure vanilla extract

1/4 cup molasses

3.5 tbsp canola oil

salt and sugar for garnish

Mix the dry and the wet separately and then combine. Form balls and place on an ungreased cookie sheet.

Cover with salt and sugar

Bake at 350 degrees for 10 minutes  or until slightly crisp on the outside.

Cool on a rack if you can stand to wait, and then consume!!!!

***The batter was too dry and crumbly so i added a few tablespoons of apple sauce until the texture was right. Next time i will only use 1 cup of flour instead of 1 1/4 cup.***

But i was still in a baking mood so i made my favorite banana bread from Veganomican. I make this bread again and agina and again and again. Its always delicious with or without the chocolate chips. I’ll put the recpie up for that tomorrow:):) And i”ll probably get around to doing last weekends recap this weekend lol it will be nice to remember the fun times as im spending all my time doing homework:(

I think I’m gonna go make some more cookies, I just ate the last one:/
