Lentil Curry Soup and Fresh Juice
Cooking for one means lots and lots and lots of days eating the same thing over and over again for dinner. Normally i can freeze half to eat later but with 3 roommates, freezer space is super rare (though i did throw out my roomie’s huge bag of meat that had been in there for months hahaha) Anyway so i pulled out my favorite kitchen appliance, a crockpot, and tossed in the leftover pumpkin and lentils, added a few cups of homemade veggie broth from the freezer, a chopped up butternut squash, a chopped up sweet potato, a few cups of spinach, and a few cups of chopped up tomatoes. All i had to do was go to bed and voila:) The next day i had a bowl of delicious soup!

I normally dont like crackers but these triscuits are addictive!! I want to make them but i have no idea how to lol so if anyone knows how to make triscuits, definitely let me know!
On Sunday, after church we stop by some thrift stores that where on the way home…….and i got a juicer!!!!!!!! Woohoo!!!! It works great but im thinking that a part is missing that would capture all the scraps cause you have to put a big bowl underneath to catch them as they fly out lol but for $15 i cant complain:)
Im not a fan of carrot juice, i love carrots and will eat atleast 3 a day but not in juice form! But emmanuel loves carrot juice:)
How do you use up leftovers or do you only cook enough for one meal? Do you have a juicer? whats your favorite combo?
