Pumpkin Spice Donuts

December 29, 2010

When you get a donut pan for christmas, the first thing you do is make donuts!!! I browsed around for a vegan recipie but then i saw angela’s banana donuts and decided to veganize them myself. These are a delicious holiday treat that i will definitely be eating year round, well for as long as i can find pumpkin;) i better start stockpiling now hehe!

Pumpkin Spice Donuts

  • 1 Banana mashed
  • 1 can of pumpkin
  • 1 tbsp smart balance
  • 3/4 cup brown sugar (there was ony white so i added molasess)
  • 1.5 cup  all purpose flour
  • 3/4 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp cinnamon
  • 1/2 tsp nutmeg

For the Glaze i combined sugar, cinnamon and nutmeg and added soymilk till it reached a glaze consistency and then added extra sugar to each donut:):)

First preheat your oven to 425 degrees.

Combine banana, pumpkin, sugar and smart balance in a mixing  bowl and blend till smooth. In a separate bowl mix together the rest of the dry ingredients.

Mix together the wet and the dry ingredients until just combined.

Spoon into the greased donut pan and place in the oven.

I made munchkins with the rest of the dough or you could make more donuts:)
Wait for the donuts to cool (if  you can) and then glaze and sugar:)

A Vegan cream cheese or buttercream frosting would also be delicious!! I was going to take more pictures in the morning but they were all eaten by then hahaha:) Enjoy!
